Pumpkin muffins

Seriously the most amazing recipe I've tried yet. Really Jami's recipe.

1 1/2 cups flour
1/2 tsp salt
1 cup sugar
1 tsp baking soda
1 15 oz can pumpkin puree
1/5 cup veggie oil
2 beaten eggs
1/4 cup water
1/4 tsp nutmeg
1 tsp cinnamon
1/4 tsp allspice
1/4 tsp cloves

Preheat oven to 350 degrees. Mix flour, salt, sugar, and baking soda. In a separate bowl, mix pumpkin, oil, eggs, water, and spices. Combine both bowls and mix. Bake 15-20 minutes. Cool on rack. Makes about 15 muffins.

Crock Pot Orange Chicken

Found this first via a picture on pinterest.com and it made my mouth water. So I found the recipe. Haven't tried it yet, but definitely plan on it! Yum.

BBQ Salmon

Ingredients
Fresh salmon (about 1 lb. or 1.5 lbs.)
Olive oil
BBQ sauce

Directions 
1) Preheat oven to 350 degrees. Coat a small (8x8")  pan with tin foil and place salmon on it.
2) Brush with olive oil (this seals in the flavor and makes it moist)
3) Spread BBQ sauce liberally over salmon. Don't be skimpy here. The more the better.
4) Bake at 350 degrees for 20-30 minutes (it took mine more like 45 minutes, I must have purchased a fatty salmon) or until flaky. Don't eat the back part (which is grey-ish) as this tastes fishy.

I served it with baked asparagus (olive oil, red wine vinegar, salt/pepper, 400 degree oven for 15-20 min. Delicious). I'm always trying to find ways to cook fish that I will like. Fish is good for us, people. Why don't I love it? Someday. This recipe is really good, though.

Healthy Fudge Brownies

Can I just say yum?! I have this thing for brownies and since I started eating healthier (I've since been not so good at it) I haven't had any because I feel too guilty. BUT on this blog- Chocolate Covered Katie- She has many delicious healthy dessert recipes And these brownies are my FAVORITE!! Tyson even likes it.

In the recipe it calls for tofu, but I don't really do Tofu so I subbed very ripe bananas in there.
I doubled the recipe and used almost a whole banana and I thought it was too banana-y so I'll do less next time.

And I wasn't feeling really experimental so I just used white sugar *gasp* but next time I'll try a healthier sweetener.

PS This is not for those that like their brownies very cakey. So fudgey and gooey. mmmmm
